Ingredients
1.8 kg Fresh Whole Chicken
1 Lemon, quartered, plus extra, to serve (optional)
1/2 Cup Fresh Lemon Juice
1/4 Cup Olive Oil
3 Garlic Cloves
5 Tbsp Honey Rub Classic Poultry
Rosemary to taste
Recipe
Preheat the oven to 350F.
Push lemon quarters and rosemary into the cavity and tie legs together with kitchen string to secure.
Place in a roasting pan. Place lemon juice, garlic, oil and honey in a small bowl and whisk to combine. Brush a little over chicken. Season well if you want with more garlic, rosemary and lemon slices.
Cover chicken and bake for 1 hour at 350F. After that, remove the cover and roast for 30 minutes.
Serve chicken with lemon sauce and extra grilled lemon wedges.
